Rum Ice Cream Cake – Rumowy Tort Lodowy – Recipe #288

2 l vanilla Ice cream
1 pack of Amaretti Cookies
4 tbs of Rum or 1 tsp of rum essence
1/4 cup of candied orange peel

Take the Ice cream out of the freezer to soften.
Line a round baking pan with plastic wrap to make it easy to remove the cake when it is ready.
Leave whole Cookies for decoration- I leave one cookie for one slice of cake (8 in this case)
Put the rest of the Cookies in a ziplock bag and crunch them into crumbs.
Cover the bottom of the pan with the crumbs and leave the remaining crumbs to add to the Ice cream.
When the Ice cream is soft enough to mix it add rum, candied orange and the remaining Amaretti cookie crumbs.
Mix until all well incorporated.
Transfer into prepared pan and smooth the top.
Decorate with the whole Cookies and place in the freezer for at least 2 hours.
To be able to cut easily make sure to remove from the freezer few minutes before serving. If you don’t use rum it will take longer to soften.
