Sauerkraut Pancakes – Fuczki – Recipe #256


  • 200 g of sauerkraut 
  • 2 eggs
  • 1 cup of all purpose flour (150 g) 
  • 3/4 cup of milk (200 ml)
  • Oil for frying
  • Salt and pepper to taste


  1. Rinse and drain the sauerkraut. Chop it roughly.
  2. Add milk and egg into a mixing bowl and whisk until well combined. Add flour and mix again. Add sauerkraut and season to taste.
  3. On the frying pan heat up a tbs of oil on medium high heat.
  4. Using 1/4 cup measuring spoon or a cookie scoop spoon the batter on to the frying pan.
  5. Fry 2 to 3 minutes on each side. 
  6. Serve with a dollop of sour cream.
  7. Enjoy!

  • Thank you for this recipe–the pancakes are delicious. Two suggestions: 1) Include the number of servings, or number and size of pancakes, the recipe makes; 2) Specify more clearly whether to weigh the sauerkraut before rinsing and draining, or after the rinse water has been squeezed out (I did the latter, and I thought the proportions were just right).
