Cinnamon Rolls - Buleczki Cynamonowe - Recipe #188

Very simple, soft, sweet and cinnamony :). I love to bake breads and sweet breads at home and I hope you will too! I hope you enjoy!

Ingredients:

Dough

  • 1 cup of milk 250 ml
  • 1 tsp of instant dry yeast
  • 1/4 cup of brown sugar 50 g
  • 1/4 cup of butter 60 g - melted
  • 1 tsp of pure vanilla extract
  • 3 eggs
  • 4 cups of flour 600 g
  • pinch of salt

Filling

  • cinnamon to taste
  • 2 tbs of butter melted
  • 1/4 cup of brown sugar 50 g

Glaze

  • 1/2 cup of icing sugar 60 g
  • Few tbs of heavy whipping cream

Instructions:

  1. In the bowl of you stand mixer combine lukewarm milk, room temperature eggs, brown sugar, vanilla extract and yeast. Give it a stir and set aside.
  2. Add salt to the flour and give it a whisk to combine.
  3. Add flour to milk and yeast mixture and using dough hook attachment start processing for around a minute.
  4. Add melted nutter and let the mixer work on medium for 5 minutes. You should get smooth and elastic ball of dough after that.
  5. remove the dough from the bowl. Knead few times and form a ball. Place back in a bowl sprayed with a non stick spray, spray the dough as well to prevent drying out. Cover and let it rise until doubled in size (1.5 - 2h).
  6. Spray the round 9in spring form baking pan with a baking spray.
  7. Roll out the dough into rectangle about half a cm thick (1/4 in).
  8. Brush the dough generously with melted butter and cover evenly with brown sugar. 
  9. Sprinkle cinnamon on top of the sugar and roll the dough in the log. Cut into 8 pieces and arrange in a prepared baking pan.
  10. Brush with melted butter, cover and let it rice until it fills in the form.
  11. Bake in 180/350 for 45 min. Cover with aluminium foil if it is browning too fast.
  12. Let it cool down a bit before removing from the pan.
  13. Add few tbs of heavy whipping cream to icing sugar and mix. Add enough cream to get right consistency.
  14. Drizzle all over the rolls and serve!

Crock Pot / Slow Cooker Apple Filling - Nadzienie Jablkowe z Wolnowaru - Recipe #187

Very simple and so useful! Have it ready for apple pie, apple turnovers, apple croissants or spread it on the toast - you choose! I hope you enjoy!

Ingredients:

  • 1 kg of apples
  • 1/4 cup sugar
  • 1/4 cup of light brown sugar
  • 1 tsp cinnamon
  • 1/2 tsp cloves
  • 1/4 tsp salt
  • 1/4 cup of lemon juice
  • 1/4 cup of hot water
  • 1 tbs of corn starch

Instructions:

  1. Peal and core the apples. Cut into chunks and place in your crock pot.
  2. Mix together the sugar, cinnamon, cloves, lemon juice and hot water and pour over the apples. Give it a stir and set on low for 8 hours.
  3. After 4 hours take the lid off, give the apples a stir and let it cook uncovered for the remaining time.
  4. In the last half an hour add the corn starch and stir. Let it cook until all the liquid is gone.
  5. Transfer hot apples into sterile jars (best are still hot from the dishwasher) and place on the towel upside down to cool down completely, I leave mine over night. 
  6. You are ready for some apple dessert!

Mini Pumpkin Cheesecakes - Mini Serniczki Dyniowe- Recipe #186

Little delicious pumpkin cheesecake treats, almost one bite :) Full of fall flavours, crunchy and soft at the same time! I hope you enjoy!

Ingredients:

Crust:

  • 2 cups of flour - 300g
  • 1/4 cup of brown sugar - 50g
  • 1 tsp of baking powder
  • 1/4 tsp of salt
  • 1 tsp pumpkin pie spice
  • 1/2 cup of cold butter - 115g
  • 2 eggs
  • 4 tbs of Greek yoghurt/sour cream

Cheese mix:

  • 450 g Ricotta cheese
  • 1 cup of pumpkin purée 
  • 1/4 cup of brown sugar - 50g
  • 2 eggs
  • 1 tsp of vanilla extract
  • 2 tsp of pumpkin pie spice
  • 2 tbs of corn starch

Instructions:

  1. Add flour, brown sugar, baking powder, pumpkin pie spice and salt to the food processor and pulse until all is well mixed. Add cold butter cut into small pieces and process until you almost can't see the butter anymore, around 40 sec.
  2.  Add eggs, yoghurt and vanilla and process until you get a ball of dough.
  3. Cover in plastic wrap and refrigerate for at least an hour.
  4. Spray mini muffin pan with a baking spray or butter it and dust with flour.
  5. Roll the dough out thin, cut circles with a 3 inch cookie cutter and line the muffin forms.
  6. Bake in preheated oven to 180c/350F for 15 minutes or until golden. 
  7. Process Ricotta cheese, pumpkin purée, eggs, sugar, pumpkin pie spice and vanilla in a food processor for about a minute or until it gets creamy. 
  8. Sift the corn starch in and mix just until well incorporated.
  9. Using 1 tbs measuring spoon transfer the cheese mixture into your cooled, baked muffin crusts and bake in preheated oven to180C/350F for 25 minutes. Cover with aluminum foil if they brown too quickly.
  10. You can serve them dusted with icing sugar.

Pumpkin Ice Cream - Lody Dyniowe - Recipe #184

Are you up for something different? The taste is amazing and the ice cream is so creamy! If you have an ice cream maker you should give it a go!

Ingredients:

  • 1 cup of pumpkin puree
  • 2 cups of heavy whipping cream
  • 1 can of sweetened condensed milk
  • 2 tsp of pumpkin spice 
  • 1 tsp of vanilla extract

Instructions:

  1. Add all the ingredients except the heavy whipping cream into the food processor and process it for couple of minutes.
  2. Add cream and process it for 30 to 40 seconds, don’t let it get whipped.
  3. Transfer into a bowl, cover and  refrigerate for couple of hours. Transfer into a Ice Cream maker and freeze according to the instructions.
  4. You can serve this ice cream sprinkled with some crushed walnuts.

Pumpkin Pie Spice - Przyprawa do Piernika - Recipe #183

OK, we officially started fall season and I will bake a lot of fall treats. I use Przyprawa do Piernika/Pumpkin Pie Spice a lot in a fall and Christmas baking so I thought I should show you how to make it at home in case you can't buy it in your grocery store!
Stay tuned for recipes where we going to put this amazing, magical  potion to use!

Ingredients:

  • 1 tbs cinnamon
  • 1 tsp ginger
  • 1tsp cloves
  • 1/2 tsp nutmeg
  • 1/2 tsp all spice
  • 1/4 tsp coriander

Instructions:

  1. Have all your spices ground.
  2. Add all spices to a small jar, mix well and keep it air tight.
