Cinnamon Rolls - Buleczki Cynamonowe - Recipe #188

Very simple, soft, sweet and cinnamony :). I love to bake breads and sweet breads at home and I hope you will too! I hope you enjoy!

Ingredients:

Dough

  • 1 cup of milk 250 ml
  • 1 tsp of instant dry yeast
  • 1/4 cup of brown sugar 50 g
  • 1/4 cup of butter 60 g - melted
  • 1 tsp of pure vanilla extract
  • 3 eggs
  • 4 cups of flour 600 g
  • pinch of salt

Filling

  • cinnamon to taste
  • 2 tbs of butter melted
  • 1/4 cup of brown sugar 50 g

Glaze

  • 1/2 cup of icing sugar 60 g
  • Few tbs of heavy whipping cream

Instructions:

  1. In the bowl of you stand mixer combine lukewarm milk, room temperature eggs, brown sugar, vanilla extract and yeast. Give it a stir and set aside.
  2. Add salt to the flour and give it a whisk to combine.
  3. Add flour to milk and yeast mixture and using dough hook attachment start processing for around a minute.
  4. Add melted nutter and let the mixer work on medium for 5 minutes. You should get smooth and elastic ball of dough after that.
  5. remove the dough from the bowl. Knead few times and form a ball. Place back in a bowl sprayed with a non stick spray, spray the dough as well to prevent drying out. Cover and let it rise until doubled in size (1.5 - 2h).
  6. Spray the round 9in spring form baking pan with a baking spray.
  7. Roll out the dough into rectangle about half a cm thick (1/4 in).
  8. Brush the dough generously with melted butter and cover evenly with brown sugar. 
  9. Sprinkle cinnamon on top of the sugar and roll the dough in the log. Cut into 8 pieces and arrange in a prepared baking pan.
  10. Brush with melted butter, cover and let it rice until it fills in the form.
  11. Bake in 180/350 for 45 min. Cover with aluminium foil if it is browning too fast.
  12. Let it cool down a bit before removing from the pan.
  13. Add few tbs of heavy whipping cream to icing sugar and mix. Add enough cream to get right consistency.
  14. Drizzle all over the rolls and serve!

Plum Butter Rolls - Babeczki Sliwkowe - Recipe #182

They are little but full of flavour, so delicate and a bit crispy. Perfect combination. I hope you enjoy!

Ingredients:

Dough:

  • 1 cup of  lukewarm milk
  • 3 eggs
  • 1 and 1/2 tsp of yeast
  • 1 tsp of vanilla extract
  • 1/4 cup of sugar
  • 4 cups of flour
  • 1/4 of a cup (60 g) butter soft

Filling:

  • Plum butter

Crumb Topping:

  • 1/4 cup of cold butter
  • 1/4 cup of brown sugar
  • 1/4 cup of flour
  • 1/4 tsp of cinnamon

Instructions:

  1. Mix all the ingredients for the dough and knead until smooth and elastic.
  2. Leave for about an hour to rise.
  3. In the mean time prepare the crumb topping. Add all the ingredients to a bowl. Using fork or pastry blender mix until you get very small crumbs. Refrigerate.
  4. Grease and dust with flour mini muffin tin.
  5. Divide the dough in two. Roll the first part of the dough out into rectangle very long and about 1/2 cm thick. Spread the plum butter on top. Roll the dough into a long snake shape. Cut pieces about 2.5 cm/1 in wide. Place each mini roll in a prepared muffin tin.
  6. Spray with a nonstick spray and cover. Repeat the same process with remaining part of the dough.
  7. Let it rise until the rolls fill in the space in a tin.
  8. Brush with an egg wash, sprinkle with a crumb topping and bake in preheated oven to 180C/350F for 16 to 18 minutes or until golden brown and crispy.
  9. After few minutes out of the oven transfer Babeczki onto cooling wrack to prevent the bottoms from getting soggy.

Sweet Cheese Bread Rolls - Drozdzowki z Serem - Recipe #180

Drozdzowki are magical in my opinion. They are sweet, soft and delicate with vanilla flavoured cheese filling. I can't stop myself from eating them so I try not to bake them too often :) I hope you enjoy!

Ingredients:

Dough:

  • 1 cup of  lukewarm milk
  • 2 eggs + 1 egg yolk
  • 1 and 1/2 tsp of yeast
  • 1/4 cup of sugar
  • 4 cups of flour
  • 1/4 of a cup (60 g) butter soft

Cheese filling:

  • 500 g of pot/ricotta/farmers cheese
  • 2 egg yolks
  • 2 tsp of vanilla essence
  • 1/4 cup of sugar
  • 2 tbs of soft butter 30 g

Glaze

  • 1 cup icing sugar
  • 1 tbs of lemon juice
  • about 1 tbs of hot water

Instructions:

Mix all the ingredients for the dough and knead until smooth and elastic. 

Leave for about an hour and a half to rise. It needs to double in size.

In the mean time prepare the cheese layer. Add all the ingredients to a bowl. Using fork or pastry blender mix until all is well combined. If the cheese is too dry you might have to add couple tbs of milk to get nice, spreading consistency.

Roll the dough out into rectangle about half a cm thick. Spread the cheese layer on top. Fold the dough in 3, bottom 1/3 way up and then cover with the top. Press gently down. Using pizza cutter cut the dough in 12 equal parts. Twist each part once in the middle and transfer onto a baking sheet lined with a parchment paper.

Spray with a nonstick spray and cover. Let it rise until puffed up. about 30 minutes.

Brush with an egg wash and bake in preheated oven to 180C/350F for 20 minutes or until golden brown. If it browns too fast cover with aluminium foil.

Mix the icing sugar with lemon and water until smooth. Add water a little bit at the time to get right consistency.  Brush tops of the warm rolls with the glaze. Let it set a bit before serving.

Yeast Pierogi with Chicken - Drozdzowe Pierogi z Kurczakiem - Recipe #179

Different kind of pierogi! We are going to prepare them with a yeast dough and leftover chicken from cooking Rosol! I hope you enjoy!

Ingredients:

For the stuffing:

  • Cooked chicken and onion from Rosol (around 500 g)
  • Half an onion
  • Oil for frying

For the dough:

  • 3/4 cup of lukewarm milk
  • 2 eggs + 1 for egg wash
  • 1/4 cup of oil
  • 1 tsp of instant yeast
  • pinch of salt
  • 1/2 tbs of sugar
  • 3 cups of flour

Instructions:

  1. Remove the meat from the bones and add it together with the cooked onion (remove the skin) into the food processor.  Process it for couple of minutes or until you get paste like consistency. Transfer into a mixing bowl.
  2. Chop the onion finely and fry on couple tbs of oil until soft and translucent.
  3. Add fried onion to the meat and season with salt and pepper. Mix until all is well combined. Cover wit a plastic wrap and refrigerate.
  4. To the bowl of a stand mixer add milk, oil, 2 eggs, salt sugar and yeast. With a whisk attachment mix until all is well combined. Add flour and change whisk to dough hook attachment.
  5. Knead the dough until smooth and elastic, around 5 minutes.
  6. Remove the dough from the mixer and form a ball. 
  7. Spray a bowl and the dough with a non stick spray. Cover and let it rise until doubled in size.
  8. Transfer the dough onto lightly flowered surface and roll until 1/4 of an inch thick.
  9. Cut rounds with a cookie cutter or a glass. Spoon half a tbs of stuffing in the middle. Wrap it and pinch the edge. Place on a silicone mat or a parchment paper sprayed with a nonstick spray.
  10. Bake in preheated oven to 180 C/350 F for 20 minutes. Cool on the cooling rack and serve!
  11. I got around 30 pierogi out of this recipe!

Polish Braided Bread - Chalka - Recipe #177

Very simple, soft, a bit sweet and delicious bread. Looks amazing and tastes even better. Try it with some butter and jam or P&J! You can't beat the smell of a freshly baked bread!

Ingredients:

For the starter:

  • 125ml milk
  • 1 tsp of instant dry yeast
  • 1 tbs sugar
  • 1/2 cup of flour 

For the dough:

  • 1 egg
  • 3 tbs sugar
  • 4 tbs water
  • 2 and 1/2 cup of flour
  • 2 tbs of melted butter 30 g

 

  • Egg yolk for brushing the top

Instructions:

  1. Add all the ingredients for the starter into one bowl, mix cover and set aside for 30 min to rise.
  2. After 30 min add all the remaining ingredients and knead until smooth and elastic.
  3. Mix for 5 min and let rise until it doubles in size.
  4. Line your baking sheet with a parchment paper.
  5. Punch down the dough, knead few times and split in three equal parts. Roll each part into a log shape, pinch all three at one end and braid.
  6. Set on a baking sheet, spray with a nonstick spray and cover with a tea towel. Let it double in size again.
  7. Brush the top with egg yolk and bake in preheated oven to 180C/350F for 25 to 30 minutes. When you tap on the top it should make a hollow sound. If it brownes too fast - cover with aluminium foil. 
  8. You can serve it with a bit of butter and your favorite jam or my kids are crazy for P&J sandwiches made with chalka.
