Sebastian's "Dulce de Leche" Cheesecake - Sernik Krowkowy - Recipe #126

Ingredients:

Pie Crust: 

  • 200 g of cookies
  • 1/2 cup of melted butter

Cheese Filling

  • 500 g of soft cream cheese
  • 1/2 cup of masa krowkowa
  • 1/4 cup of soft butter
  • 2 eggs
  • 1/4 cup of flour

Glaze

  • 1/2 cup of masa krowkowa

Instructions:

  1. Line your 8 by 8 baking pan with parchment paper.
  2. Crush the cookies into crumbs, using food processor or ziplock bag and rolling pin.
  3. In a bowl stir the crumbs with melted butter until all the crumbs are moistened. Press the crumbs evenly over the bottom of your pan. Refrigerate until your cheesecake batter is ready.
  4. Add soft butter and cream cheese, masa krowkowa and eggs into your stand mixer fitter with a paddle attachment. 
  5. Mix until all is well combined.
  6. Add flour and mix for 30 sec more.
  7. Transfer on your chilled cookie crust and bake for an hour in 160 degrees celsius oven. Let it cool down completely before removing from the oven and decorating.
  8. Drizzle with remaining masa krowkowa. You can microwave it for around 20 seconds to have better consistency.
