Sour Rye Soup Starter - Zakwas na Zurek - Recipe #84

We are going to prepare Zurek soon and to be able to do it we will need zakwas. Zakwas is made from rye flour and water and is distantly related both to sourdough and to Russian kvass. In Poland, zakwas is available in supermarkets. Outside of Poland, you can find it in specialty ethnic markets.


  • 1/2 cup of rye flour
  • 1/2 liter of water
  • 2 cloves of garlic
  • Bay leaf
  • All spice
  • Peppercorns 


  1. Boil the water and let it cool. 
  2. Add the flour to a glass jar and add half of the water. Mix well.
  3. Add the rest of water and all the spices.
  4. Cover lightly and leave in warm place for 2 to 4 days.
