Ingredients:
- 4 red bell peppers
- 250 g minced turkey
- 100 g white mushrooms
- 1/4 of a medium onion
- 1 cup of chicken stock
- 1/4 cup of rice
- 1/4 cup of tomato purée
- 1/2 a tsp of marjoram
- 1 clove of garlic
- 1/2 tsp of salt
- 1 egg
Instructions:
- Put the rice in a saucepan and add 1/2 cup of water and pinch of salt. Cook on low until all the water is absorbed. Keep checking on it ofter because it tends to burn very quickly.
- Wash your bell peppers and then cut off the tops. Clean the inside and set aside.
- Cut the onion very finely.
- Wash and chop very finely the mushrooms.
- Transfer the minced meat to a mixing bowl. Add salt, marjoram, grated clove of garlic, chopped onion, chopped mushrooms, egg and the tomato puree. Mix all very well.
- Stuff the bell peppers and arrange in a baking dish. Pour the chicken stock into the baking dish and bake in preheated to 180 degrees Celsius oven for 50 minutes.
